Snow Pea and Red Onion Salad with Sesame Vinaigrette

  • 8 ounces of snow peas, sliced lengthwise
  • 1/2 red onion, thinly sliced
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons rice vinegar
  • 1 teaspoon sesame seeds (preferably black)
  • kosher salt and pepper
  • Serves 4

  • Total Time: 10 minutes
In a medium bowl, toss the snow peas and onion with the oil, vinegar, sesame seeds, 1/4 teaspoon salt, and 1/8 teaspoon pepper.

This salad was simply refreshing and delicious! Unfortunately, our local grocery store did not have the snow peas in stock, but after sharing the recipe with the produce manager, he recommended that we try using snap peas instead. The snap peas were fresh, fat with "in season-ness" from a local farm and a divine compromise.
